Not to brag...

but I am so proud of myself.

First though, I have to admit that I am a bad housewife and have serious issues with keeping our house neat and cooking regularly. (Though I try and try and try!) Which brings me to the point of my post: I made a dinner, complete with vegetables, and even sometimes dessert, every night this week!

And just to try and stem some of the flow of questions, yes we eat dinner every night. But lately it's been oatmeal, or eggs and toast (which are fine meals, not ignoring the good qualities of those foods), or the like.

So just to boast, I'm posting my menu.

Monday: Lemon and herb baked shrimp with julienned (thanks to Jason's ingenuity and enthusiasm with our mandolin) zucchini and crookneck squash. Greek salad. Peach cobbler and ice cream for dessert.

I cooked the squash (from Amaanda) in LOTS of butter, olive oil, and garlic since I can't stand the taste of squash.

Tuesday: Homemade pizza with homemade tomato sauce, cheese, and salami. Salad with yellow bell pepper and tomato with a basil vinaigrette. Key lime bars for dessert.

Wednesday: Chinese 5-Spice Pork Chops with grilled plums and green onions. Couscous and sauteed crookneck squash. (This was really good - the marinade was soy sauce, honey, cinnamon, clove, and ginger.)

Thursday: Pasta with garlic cream sauce and herbed shrimp. Spinach salad with apples, cucumbers, and blue cheese.

Friday: Roasted chicken and German potato salad, with spinach salad on the side.

So yes, I am proud of myself. But we'll see how next week goes.
