I'm trying to get back in the habit of planning out our meals, at least dinners (since we usually just eat pb & j and leftovers for lunch), and doing most of the shopping all at once.
This week, this is what we'll be having. Some of the recipes are new, so we'll see what they turn out like!
- French Onion Soup and salad - I'm making beef stock this afternoon from beef bones I have.
- Chicken Salad with Peppers and Pears and veg
- Scallion Meatballs/Potatoes/veg - I'm going to be making these with beef, since that's what we have on hand. I'm hoping it will still work with that stronger flavor since the recipe calls for ground turkey.
- Barley Risotto with beans and greens and and some sort of bread/veg side
- Bulgar Salad with pitas
- Baked Eggs with Spinach and Mushrooms/yogurt/fruit
