Recent Cookery

Last night we had some leftover pizza dough (from making a classic pizza with sausage, pepperoni, onions, and mushrooms), so I decided to make some "fun pizzas."

The one on the left was a potato pizza with rosemary, olive oil, salt, and pepper with a little parmesan on top. It was good, but the piece I had contained way too much rosemary so it had a little off taste. But overall it was ok. I sliced the potatoes thinly on my mandolin first. Then I spread a little olive oil on the crust and then layered the potatoes with salt and pepper and more oil. Rosemary and parmesan went on top. I basically followed this recipe from smitten kitchen, but just kind of read it and then went my own way. I want to make it again and hopefully avoid any weird tastes.

The pizza on the right was a caramelized onion and goat cheese pizza. I caramelized the onions by sauteing them for about 30 minutes on the stove over low/medium heat and covering them, stirring occasionally. To assemble I spread olive oil on the dough, placed the onions and then crumbled herb goat cheese on top. I also added some finely chopped walnuts. This was delicious and yummy! Also a favorite of Jason's, since he LOVES anything with goat cheese.

Finally, we also had a warm spinach salad. It has all my favorites in it: spinach, bell pepper, BACON, eggs, and red onion. Taken from the Food Network site, I followed this recipe by Alton Brown.

And today I am attempting bread! I am following a recipe from our church cookbook, a basic whole wheat with some honey. I hope I followed the directions properly and that it turns out. It's having its second rise right now. Fingers crossed it turns out!

Oh man - it was yummy. You'll have to come over for lunch one day and we'll make it.
